Citrus Cake

Tis the season for refreshing food! I'm going to a baby shower tonight for another dentist's wife who is having triplets. I decided to make something very low in fat and calories that is light, fluffy and refreshing. For those of you who follow Weight Watchers, each piece is only 1 point!

Citrus Striped Angel Cake

1 pkg angel food cake mix
1 pkg sugar free orange jello
3/4 cup boiling water
1/2 cup cold water
2 cups thawed frozen lite Cool Whip
1 orange (optional)

Preheat oven to 350. Prepare cake mix according to package. Pour into 9x13 baking dish and bake for 35-40 minutes. Cake should be firm to the touch; do not under bake. Carefully turn dish upside down over cooling rack, but do not remove cake from pan, for 45 minutes.

Using metal skewer, poke holes in the cake about 1 1/2 inch deep 1/2 inch apart.

Mix boiling water and jello until it is dissolved, then stir in the cold water. Pour evenly over the cake and refrigerate for 3 hours.

Frost cake with Cool Whip, cut into 15 even squares. I cut them again to make triangles. Each triangle is 1 Weight Watchers Point. SO YUMMY!!!
